TRACEABILITY
Risk reduction The unique code enables traceability of each individual cheese at every stage of the production and distribution process. If something has gone wrong during the production process or if a cheese has been contaminated with micro-organisms, the code makes it possible to determine accurately which batches of cheese are unsafe and must be withdrawn from the market, limiting the damage to a minimum.
Legal requirements Use of the cheese mark also guarantees compliance with legal traceability requirements, seeing that, under the General Food Law (regulation EC 178/2002), you are obliged as a cheese producer to ensure that every product can be traced at any time during the production and distribution chain. This works in two directions: both the origin (e.g. the origin of the milk) and the retail destination of the cheese must be known.
